Ingredients

  • 1 package Bavarian Meats Smoked Bratwurst

  • 4 Tablespoons unsalted butter

  • 4 Tablespoons all-purpose flour

  • 1 cup whole milk

  • 1 cup Reubens beer

  • 1 teaspoon Worcestershire sauce

  • 1 teaspoon dijon mustard

  • ¼ teaspoon smoked paprika

  • ¼ teaspoon cayenne pepper (optional, but mandatory if you like spicy)

  • ¼ teaspoon salt

  • ¼ teaspoon pepper

  • 2 ½ cups sharp cheddar cheese, shredded

    To serve:

  • Soft pretzels, fresh bread or crackers and a few veggies (we won’t tell!)

Directions

Prepare your game-day brats:

  • Preheat the oven to 425 degrees.

  • Place brats on a sheet pan and roast for 15-20 minutes until the bratwurst are warmed through and look just right! Remove brats from the oven, slice on the bias and arrange on a game-day platter.

    Make the Beer Cheese Dip

  • Melt the butter in a medium saucepan over medium heat. Add the flour and whisk together until a thick and clumpy paste forms, about 1 minute.

  • In a slow and steady stream, whisk in the milk. Continue whisking until it slightly thickens, about 1 minute..

  • Slowly add in the beer, Worcestershire sauce, mustard & seasonings and continue stirring for 3-5 minutes until thickening. Over a low heat, add in shredded cheddar cheese and stir until just melted.

  • Remove the completed dip from heat and pour into a serving dish.

    To serve

  • Serve with pretzels, fresh bread, or your favorite crackers. Include a few vegetables, if you must. And don’t forget the ice-cold Reuben’s!

Pro Tip – Pairs nicely with whatever team you root for, but tastes better when Seattle teams play. TOUCHDOWN!
