Baby, it's still cold outside soup!

Ok… we don't really attempt New Year's resolutions anymore. But, if we did, we'd nail it with our Bavarian version of Vegetable Sausage Soup– meaty, smoky, satisfying, and pretty healthy for you too!

Ingredients
1 Tbsp olive oil
1 package Bavarian Meats Smoked Bratwurst, sliced
4 strips smoked bacon, chopped
1 large white or yellow onion, chopped
6 cloves garlic, minced
3 large carrots, chopped
1 can Great Northern White beans, drained
1 28oz can fire-roasted tomatoes
32 oz Chicken or Beef stock
5 sprigs thyme, minced
2 sprigs rosemary, minced
1 tsp pepper
1 tsp fennel seeds
1 tsp red pepper flakes (optional)
1 bunch kale, shredded
Parmesan to garnish

Directions

  1. Cut and prep all the vegetables, sausage, and bacon. Cut into uniform and larger size pieces, so they stay intact and cook at the same speed.

  2. Heat large pot over medium heat. Add olive oil.

  3. Add Bavarian Meats Smoked Bratwurst and chopped bacon to the pot. Let cook for 5-7 minutes, stirring occasionally. Adjust time and temperature as needed not to burn or overcook.

  4. Add onion and garlic and continue to cook for another 3-4 minutes.

  5. Add the carrots, beans, and tomatoes. Mix well. Cook for 5 minutes.

  6. Add stock and seasonings and bring to a simmer. Cook covered for 30 minutes to 1 hour over low heat - the soup should just be simmering.

  7. 15-30 minutes before serving, add the shredded kale. Continue to simmer for a final few minutes.

  8. You did it! Time to EAT! Garnish the soup with fresh parmesan. Serve with your favorite bread.
