In Germany, Christmas is a nostalgic season filled with history, merriment and tradition and here at Bavarian Meats we have a long legacy of celebrating and bringing this season of joy to our customers. Whether we are cranking up the smoker for our flagship bone in hams or rearranging the deli to make way for a parade of imported treats, we cherish this time of year and look forward to sharing it with you!

Our wonderful German born store manager, Gabi, starts planning for the season back in May when she carefully makes her list, checks it twice, and orders endless specialties from purveyors in Germany. As the seasonal magic unfolds, marzipan, pfefferkuchen, stollen, and lebkuchen arrive at the shop and it all begins.

Bavarian Meats - Ho Ho Holidays!

Gabi is gearing up quickly and tastes of Germany are arriving daily! The stollen (fruit bread) and lebkuchen (gingerbread) are already flying out the door. The selection of specialties, such as the colorful foil-wrapped chocolate Santas, ornaments and Saint Nick’s, offers a delicious taste of the homeland for under $10.

Ornate musical cookie tins filled with lebkuchen delight both young and old.  And the rosy marzipan pigs, which sell quickly and are sprinkled throughout the deli, are a German New Year tradition as they bring good luck and fortune for the year ahead.

For 2018, we have created a special Holiday Salami Sampler, which will be sold at the deli and will feature 4 five-ounce salamis: our classic Cervelat, flagship German Salami, Sherry Fennel and Truffle.  It makes a great addition to a gift box or convenient hostess gift.

In Germany, ingredients such as apples, nuts and almonds, play a traditional and symbolic role in the holiday dinner table but Gabi reminds us that one item, the main course meat, can vary from home to home and run the gamut from goose to beef to ham, pork, schnitzel or kassler ripchen.

Here at Bavarian, the tradition of our bone in holiday hams runs deep in many Seattle households, but with the next generation taking the helm at the stove, we say why not reach for our kassler ripchen?  These robust fully cooked and smoked bone in pork loins are full of smoky salty flavor and only require a simple gentle reheat in the oven, which clearly lightens the load for the season’s harried cooks.  Easily sliced by even a novice, kassler ripchen readily stands in for Mom’s more elaborate roasts and can be served with those classic sides. And, perhaps best of all, it requires no preparation and minimal cleanup. We’ll drink to that!  Kassler ripchen is available at the deli and can be ordered in advance.

Brewing a Love for Local Partnerships!

Pike Brewing Beer Brat featuring the Pike IPAHere at Bavarian we take our family sausage business seriously and that’s why we are proud to announce that our newest product, the Bavarian Meats pike brewing Beer Brat, is just another example of how we keep it local and “in the family.” A variation on our classic brat, the Pike Brewing Beer Brat features the pike ipa.

Made at the brewery right here in the Market, the IPA is delivered to us weekly and is skillfully incorporated into Grandpa Max’s classic brat, resulting in a robust sausage with hoppy undertones. Available just in time for Oktoberfest, the Pike Brewing Beer Brat can be found at our deli in the market, at haggen supermarkets (in October 2018), and on the menu at the pike pub where Chef Gary braises it in beer and serves it with his apple sauerkraut, mashed potatoes, and a side of Pike Stout Mustard.

Reflecting on the new partnership and shared legacy, the Pike Brewing Founder, Charles Finkel, says, “Our love for the Pike Place Market was a big factor in our decision to establish the Pike Place Brewery in 1989.  We were inspired by other family owned, independent businesses like Bavarian Meats. Their pride in producing extraordinary sausages, landjaeger, and other specialties we had experienced on our travels in Germany, their knowledge, and quality of service, established a perfect role model. That we are now partnering with our neighbors, this venerable family firm, to produce a delicious Bavarian Meat/Pike IPA bratwurst makes us proud.”

Sausage: The Convenient Meat!

A recent USDA study on the food purchasing decisions of Millennial households reports that Millennials have a higher preference for convenience than other generations when making food purchase decisions. Can our sausages play a role? You bet they can because they are the ultimate meaty convenience.

Many of our sausages are fully cooked and, of course, come in their own tidy little casings. There’s no need to mess up the kitchen or even drag out a cutting board. Our sausages go from package to pan in one swift swipe. They reheat quickly. Clean up is a breeze. Some of our favorites for a full-flavored meal? Smoked Cheddar Sausage, Smokin’ Hot Cheese Sausage, Smoked Bratwurst, and Smoked Chicken Andouille.

Our beloved German born and bred deli manager, Gabi, is gearing up for the homeland’s favorite feast– Oktoberfest.

What’s on our deli menu from September 21st to October 21st?  Schweinehaxen, Schweinebraten, Schlachtplatte for Two, Weisswurst with Fried Potatoes and Red Cabbage, Pretzel with Obatzter, and Apple Strudel for dessert. Or, if you want to craft your own Oktoberfest party at home for a football game, make it easy with a bunch of brats or bocks from us. Simply heat the grill, cook the sausages, heat the kraut, add some buns, good mustard and you’ve got a great German gig for halftime.

Celebrate Oktoberfest around the region and look for our sausages and specialties at the prost german pubs in Seattle, Portland and Boise, at bruno’s european restaurant in Lakewood, at the oktoberfest german restaurant in Billings, Montana, and…well, it practically goes without saying but at many of the restaurants in leavenworth!
